 1 cup Shredded Red Cabbage (optional, for color)
 2 Large Carrots, Peeled and Shredded
 ¼ cup Chopped Fresh Cilantro
Dressing
 2 Lime Juice (1/4 cup or about 2 limes)
 2 tbsp Olive Oil or Avocado Oil
 1 tbsp Maple Syrup or Honey
 1 tsp Sea Salt (or to taste)
 ¼ tsp Black Pepper
 ¼ tsp Ground Cumin (optional, for depth)
 1 pinch Chili Flakes (optional, for heat)

Shred & Chop: Use a mandolin, food processor, or knife to finely shred cabbage and carrots.

Make the Dressing: In a small bowl, whisk together lime juice, oil, maple syrup, salt, pepper, and optional spices.
